Bread Baker Job Description
The Bread Baker at Wheatsfield Cooperative is responsible for making bread from scratch and keeping the bread area on the sales floor fully stocked and cleaned. This position is responsible for providing customers with culinary and nutritional information about bread.
The baker position may be full or part time and reports to the Deli Manager.
Responsibilities
- Customer Service:
- Greet customers in a friendly manner; responds quickly and courteously to all requests from customers
- Answer product questions
- Take the initiative to increase product knowledge about bread products
- Know store layout, keeps in touch with the products we carry, and refers customers to correct resources when necessary
- Respond to customer requests for certain/specialty baked items
- Educate customers about new products in the bakery, etc.
- Refine systems for taking custom orders for bread
- Purchasing and Inventory Management
- Determine product mix to achieve sales and margin goals and satisfy customer demand
- Use only those ingredients which are in line with the store’s mission
- Place orders with suppliers to ensure minimal out-of-stocks and losses
- Communicate with local producers and place orders
- Research new items and rotate baked goods seasonally and as necessary, and put an emphasis on locally sourced ingredients when possible
- Understand the department margin goal and know how to change prices in the scale and in Catapult system
- Ensure that accurate invoicing, pricing, credits and returns, coding, and invoice routing is done with each invoice
- Determine items to be placed on sale according to movement and work with the Pricing and Data Manager to set up sale sheets
- Ensure credits are requested and received from suppliers where applicable for returned, damaged, or spoiled goods
- Record and report bread losses on appropriate forms
- Conduct bread inventories monthly and as required
- Utilize budget sheets to help in ordering process and other financial tools as necessary to run an efficient sub-department
- Organize baked goods in back-stock freezers and coolers to ensure minimal losses
- Bread Packaging
- Knowledge of basic bread items, how best to display and package
- Develop time management skills to minimize time spent packaging product, and develop speed in the cutting process
- Ability to load labels and use scale, including entering new items
- Show proficiency in safe knife usage
- Ability to display bread in an attractive and sanitary manner
- Prepare, package, and price sufficient quantities of bread to keep the shelf full
- Frequently clean and sanitize all equipment, including counters, coolers, knives, cutting boards, etc.
- Clearly label and separate any allergen-free items
- Merchandising
- Fill and merchandise set according to customer demand and season
- Stock/face sales floor during shift
- Display bread so it sells and is easy for customers to find
- Change signs and educate consumers about new items
- Other responsibilities
- Become familiar with and able to explain membership simply, efficiently, and completely
- Become familiar with the products carried at Wheatsfield and where they are located throughout the store. Gather product information from experienced staff, customers and various reference materials
- Work shifts as assigned, informing the your supervisor or the Store Manager of any difficulties in working your assigned shift as soon as possible
- Arrive at work for your shift allowing enough time to clock-in at the assigned time and be on the floor ready to begin your shift
- Adhere to store policy governing the use and payment of house charges
- Attend and participate in mandatory staff and department meetings as scheduled
- Use store computers for business use only
- Keep supervisor informed of any problems or ideas
- Help customers with special and case orders
- Know and follow store policies and procedures
- Train other people in bakery responsibilities when needed
- Other tasks as assigned by supervisor
